Strawberry Meringue Dessert


3 egg whites
¼ teaspoon cream of tartar
¾ cup sugar
¼ cup finely chopped salted soy nuts
1 (8 ounces) packages soy cream cheese, softened
1/2 cup powdered sugar
1 teaspoon vanilla
1 cup whipped whipping cream
2 cups fresh strawberries, sliced


In mixing bowl, beat egg whites until foamy. Add cream of tartar; beat until soft peaks form. Gradually add sugar, beat until very stiff peaks form. Cover baking sheet with parchment paper. Spoon about 1/3 cup meringue onto parchment paper; build up the edges slightly. Bake at 275 degrees for 1 hour. Turn off oven and do not open door for 1 hour and 30 minutes. Remove from oven and cool completely. In mixing bowl, beat soy cream cheese, powdered sugar and vanilla until smooth. Fold in whipped cream until mixture is well blended. Place heart on serving plate; fill each meringue with cream cheese mixture and top with fresh strawberries. Makes 8 meringue desserts
