4 cups frozen shredded hash brown, thawed
1 cup shredded Cheddar cheese
1 cup pepperoni slices
½ cup chopped green bell pepper
1 chopped Roma tomatoes
4 eggs
¾ cup soy milk
½ teaspoon salt
1 cup shredded Mozzarella cheese
½ cup pizza sauce
2 tablespoon parmesan cheese


Combine in mixing bowl hash browns and Cheddar cheese. Place half of mixture into 8 x 8 x 3- inch baking dish. Layer pepperoni on hash browns; top with green pepper and tomatoes. Cover with remaining potato mixture. In small mixing bowl thoroughly combine eggs, soy milk salt and pepper. Pour mixture over potato mixture. Cover with foil and bake or store in refrigerator over night. To bake place casserole in a 350o F. oven for 1 hour or until knife inserted in center comes out clean. Add pizza sauce and heat 5 additional minutes. Remove from oven and let stand 5 minutes. Sprinkle with parmesan cheese. Serves 4 to 6
