Double Raisin Oatmeal Cookies


1 cup margarine or butter
2 cups packed brown sugar
2 eggs
2 cups soy flour blend
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon salt
3 cups old-fashioned oats
1 cup raisins *


Combine margarine and brown sugar in mixing bowl; blend. Stir in flour, cinnamon, baking soda and salt. Add oats and raisins; mix well. Drop dough by tablespoon onto ungreased baking sheet and bake at 3500 for 10 to 12 minutes. Let cookies cool on pan then remove from baking sheet and place on wire rack. Makes about 2 dozen cookies

*Condition raisin by placing raisins in microwave safe bowl and adding ½ cup water. Microwave for 1 minute; drain water.
