Crunch French Toast


1 ½ cup vanilla soymilk
3 eggs
3 cups sweetened multigrain cereal, crushed
1 (one pound loaf) French bread, cut in twelve 1-inch slices
Fresh fruit
Powdered sugar


Combine soymilk and eggs in mixing bowl. Crush cereal in sealed bag with rolling pin; place in shallow bowl. Dip bread in egg mixture and then coat with cereal mixture. Place in greased pan; cover place in refrigerator overnight. Bake at 375 degrees for 10 minutes then turn and bake until golden brown. Serve with fresh fruit, syrup and powdered sugar. Serves 6
