Crabby Poppers


12 jalapenos
1 cup lump crabmeat
½ cup fresh corn kernels
4 oz. cream cheese, softened
2 oz. goat cheese, softened
3 scallions, chopped
Juice and zest of ½ lime
Kosher salt, to taste
¼ cup crushed tortilla chips
¼ tsp. ancho chili powder


Slice off about 1/3 of the top of each jalapeno, lengthwise; scrape out the membrane and seeds from each one; set aside. In a medium bowl, combine crabmeat, corn, cheeses, scallions, lime juice and zest, and salt; stuff each prepared jalapeno with a generous 2-3 Tbs. of crab mixture. Combine chips with chili powder; sprinkle over stuffed jalapenos. Grill jalapenos over medium low heat, stuffing side up, for 12-15 minutes or until nicely charred but still firm. Serve at once!
