Thom's Cowboy Brown Beans


1 lb. dry pinto beans (spread these out over a cookie sheet to sort our any undesirables)
1 smoked ham hock
1 lb. cooked ham cut in 3/4 inch chunks (I used a Cook's ham steak)
1 yellow onion, diced
1 tsp. cayenne pepper
1 tsp. garlic powder

And other options! Add 1 cup long grain brown rice and 3 additional cups of water. Also, add 1 more tsp cayenne pepper and 6-8 jalapeno peppers, sliced.


Wash beans - put in a big ole pot and cover with 1 inch of water - bring to a boil. Remove from heat and let beans set for 1 hour. Pour off water and rinse beans. Add all other ingredients along with 7 cups of water to pot. Bring to a boil and let simmer till done - 4 hours or so, stirring every 15-20 minutes. The first time something sticks to the bottom of the pot, they're done!
