Load Me Up Oatmeal


1 cup water
½ cup rolled oats (not instant)
¼ cup canned pumpkin
2 Tbs. pure maple syrup
¼ tsp. cinnamon
1 Tbs. chopped toasted pecans
2 Tbs. ground flax seed
Kosher salt, to taste
Blue Bunny Light Yogurt – Vanilla Crème
Agave nectar, if desired


In a small sauce pan, bring water to a boil over high heat. Stir in oatmeal and reduce heat to medium; cook for 5-6 minutes, stirring constantly, until oatmeal is thickened to desired consistency. Stir in pumpkin, syrup, cinnamon, pecans, and flax seed; season with salt to taste. Spoon oatmeal into serving bowls and top with yogurt; drizzle with agave nectar if desired. Serves 2-3 people.
