Serves: 6 (1 cup each)
1 T. Canola oil
2 cup Diced yellow onion (about 2 cups)
1 ½ T Chili powder
1 T Minced garlic, about 3 cloves
1 ½ t Cumin
1 t Oregano
3 cans Great northern beans, rinsed and drained
4 cups Kitchen basics chicken broth
3 cups Chopped cooked turkey or chicken
½ cup Diced tomatoes, drained
1/3 cup Chopped fresh cilantro
2-4 T Fresh lime juice
Salt and pepper to taste
DirectionsHeat oil in large Dutch oven over medium-high heat. Add onions; sauté 10 min. or until tender. Add spices; sauté 2 min. Add beans; cook for 30 seconds. Add broth; bring to a simmer. Cook 20 minutes.
Place 2 cups of mixture into blender or food processor until smooth. Return to pan. Add meat, cook 5 min. or longer. Add diced tomato, cilantro, lime and salt and pepper, stirring well.
