TOPEKA, Kan. (WIBW)-- Hailing from about two hours away in Wichita--Chef Ivan Longoria is ready to shake things up for pizza lovers in the Capital City, with worldly flavor inspiration he says is easy to describe..
"I would say, it's fusion Spanish and Italian," he said.
That's what Longoria says makes Thin and Crisp Gourmet Pizza so special, a menu with options he says you can't get anywhere else.
Thin n Crisp Gourmet Pizza opened it's doors for the first time late September, but Longoria says he's here to stay, in order to introduce options that are more than just savory pizza---but a culinary creation.
"The things you take pride in as a chef, or any chef will tell you, is the presentation, the presentation of the pizza is just it looks as good as it tastes," he said.
And once a customer tries it, they are sure to find their favorite item on the menu.
"My favorite is the "Rizo Remoulade, a combination of chorizo, caramelized onions and which we make the caramelized in house we don't buy that packaged or anything," Longoria said. "Same thing with the mushroom, we make the bacon in house."
For Longoria, it's more than about cooking up great ideas in the kitchen, the chef also wants to make a difference in the community...providing job opportunities that will help lead many locals out of trouble and into a positive future.
Any place that is crime heavy is related to a lack of jobs, the ultimate goal is to create jobs, we are very passionate about that" he said.
While Thin and Crisp may be unlike other local pizza favorites, Longoria says you will find features at the restaurant that make a great pizza anywhere you go, like a tasty sauce and a homemade crust.
"You get people who are afraid to try something different and we've heard a few comments like the pizza has to much green," he said. "I just say, wait until you try it, that's all i gotta say about that."
Thin and Crisp Gourmet Pizza is located at 5855 SW 21st St. in Topeka. The restaurant is open from 10:30 a.m.-8:30 p.m. Tuesday-Thursday, and from 10:30 a.m.-11:30 p.m. Friday and Saturday.
