Delicious Soy Butter Fudge Recipe from the Kansas Soybean Commission


2 cups granulated sugar
½ cup vanilla soymilk
¼ cup butter
1 cup WOWbutter (Soy nut butter), divided
1 cup milk chocolate chips, divided
1 cup roasted salted soy nuts, divided
¼ cup all-purpose flour
¼ cup soy flour

Grease 8x8-inch baking dish. Combine sugar, soymilk and butter in medium saucepan. Bring mixture to a boil and continue cooking for 4 minutes. Remove saucepan from heat and stir in ½ cup soy nut butter ½ cup chocolate chips and ½ cup soynuts. Gradually stir in soy flour and all-purpose flour; thoroughly mix. Spread mixture into prepared pan and refrigerate for two hours or overnight. Spread the remaining ½ cup soy nut butter over the fudge. Sprinkle with ½ cup of chocolate chips and ½ cup soynuts. Cut into 24 squares.
