Fork in the Road: Culinaria brings together a world of cuisine

LAWRENCE, Kan. (WIBW) - Some restaurants aim to be one particular style like American, Italian or Chinese food, but Culinaria Mediterranean Kitchen in Lawrence aims to be totally unique with its own blend of spices deriving from many different places.

In this week's Fork in the Road, brought to you by Hell Rayzors Roadhouse, 13 NEWS looked into how their serving up food in an effort to include everyone.

One of the first things you see when you walk up to Culinaria in Lawrence is a sign in multiple languages saying, "No matter where you are from, we're glad you're our neighbor."

It’s how husband and wife owners Aaron and Regan Pillar say they run their restaurant, it’s also a major inspiration for their menu which isn’t just Mediterranean food.

"We're inspired by food from Israel is sort of the main inspiration as far as the spice content comes into play, but we also give a little bit of an Italian flare, a little bit of Spanish thing going on, so it’s really just very flavorful food." Co-owner Regan Pillar said.

Which means there’s something for everyone like interracial couple Mary and Mukund Marathe who celebrated their 40th Valentine’s Day at Culinaria this week.

“We got married and obviously we are of different ethnicities and we love Indian food and we love Middle Eastern food so this sounded like a good fit for us,” Mary explained.

Culinaria's steaks are also a big draw which are cooked in a bag to ensure they don’t get cooked beyond medium rare.

“I have a little French grill and I just put a little bit of a grill mark on it.” Co-owner and chef Aaron Pillar explained. “In the summer when it’s not freezing I'll go outside and make a BBQ and cook it out front."

But it’s their spices that are the game changer.

"It’s a pretty unique and sort of different style of cuisine but the dishes are made to be very approachable, so we have beef and chicken and pork and various things just done in a slightly different way." Regan said.

A unique taste the Marathe's say the Midwest needs more of.

Culinaria Mediterranean Kitchen is open Thursday, Friday and Saturdays from 3:30 to 9 pm.
