Summer Sweet Corn: Microwave, Oven or Grill?


Microwave: 4 minutes per ear in husks – for each additional ear, add 1 minute to cooking time
Oven: 350 degrees F. – 30 minutes in husks – turning half way through
Grill: Direct medium heat – 30 minutes in husks – turning often

Direct medium heat – husks pulled back and laid over indirect heat – 20-30 minutes, turning often

Making it with Lime and Ginger Butter:

1/2 tsp. chicken base paste
1/3 cup water
¼ cup unsalted butter
1 Tbs. granulated sugar
Zest from 1/2 lime
1 tsp. Kosher salt
1 tsp. freshly grated ginger or ½ tsp. dried ginger

Or making it with Lemon Curry Butter:

½ tsp. chicken base paste
1/3 cup water
¼ cup unsalted butter
1 tsp. dried dill
Zest of 1/2 lemon
1 tsp. curry powder
½ tsp. Kosher salt
Freshly ground black pepper, to taste


Place all ingredients into a small saucepan over medium low heat and whisk together; bring to a boil, then reduce heat and simmer until sauce thickens slightly, approx. 7-8 minutes. Keep warm until corn is ready.
