This is one of two recipes Ralph and Chef Alli showed on "13 News at 4" for Thanksgiving Eve on what to do with all that leftover turkey!
Ingredients
A 9-inch pie shell, unbaked
3/4 cup chopped fresh broccoli
2 Tbs. finely diced onion
1 Tbs. unsalted butter
1 cup chopped, cooked turkey
1 cup shredded Gruyere or Swiss cheese
3 eggs
1 1/2 cups half and half
1 tsp. curry powder
1/2 tsp. kosher salt
Directions
In a sautee pan over medium heat, cook broccoli and onion in butter, stirring often, until tender. Sprinkle cooked broccoli and onion over bottom of pie shell; top with turkey and cheese, spreading evenly. In a small bowl, beat eggs; add half and half, curry powder and salt - beat well. Pour egg mixture over ingredients in pie shell. Bake in 350 degree oven for 25-30 minutes or until knife inserted in center comes out clean.
