Chef Alli's Hatch Chili Hominy Bake
Ralph loves grits! And he really loves this hominy bake Chef Alli's preparing during this week's Hatch Chili Festival at HyVee!
Ingredients
1/2 cup minced onion
1 red bell pepper, minced
2 Hatch Chiles, seeded, roasted and diced
1 Tbs. vegetable or canola oil
1 can white hominy and 2 cans yellow hominy, drained
2 cups sour cream
2 cups Monterey Jack Cheese, shredded
2/3 cup bread crumbs
¼ cup melted unsalted butter
Directions
In saute pan over medium heat, sauté onion and bell pepper until softened; combine with chiles, hominy, sour cream and cheese in a large mixing bowl and mix together gently. Transfer mixture to a buttered 9 x 13 casserole dish. Combine bread crumbs with melted butter, then sprinkle over the top of hominy mixture in casserole dish. Bake, uncovered, in preheated 350 F. degree oven for approx. 35-40 minutes or until hot and bubbly throughout.
