Chicken Fried noodles

Ingredients:
3 - boneless chicken breasts (cut into small pieces)
8 oz spegetti noodles 3 - cups broccoli pieces 1 med coarsly chopped onion 3 carrots - grated 1/2 c mushrooms ( whole or chopped) 1/2 c peapods (about 8-10) 1/2 can water chestnuts (drained) 3 TbS olive oil (or regular) 1/4 c soy sauce 1 garlic clove 1 tsp ginger (any type) |

Directions:
In a 2 quart sauce pan, bring water to a boil and add noodles, cook until done, drain and place to the side.
While noodles are boiling, place 3 TBS of oil in wok or large/deep frying pay and heat one minute, add chicken and cook completely while stiring often. Next, add all the vegetables and garlic, letting them cook down for about 5 minutes while stiring often. Add soy sauce and ginger while continueing to cook another 5 minutes. Lastly stir in the cooked noodles until mixed well. Serves 4 - 6 |
