2 1/2 lbs Red potatoes
3/4 cup sour cream
1/4 cup bacon bits
1 1/2 cups shredded cheddar cheese
2 tsp parsley
1/2 cup Ranch dressing
2 cups crushed Corn Flakes
1/4 cup melted butter
Boil potatoes with skins on, cool, then cut into pieces
Mix sour cream, bacon bits, parsley, Ranch dressing and 1 cup shredded cheddar cheese;
mix in the potatoes and put into 9x13 baking pan
Mix melted butter with corn flakes then mix with cheese and put on top of the potatoes.
Bake for 30 minutes at 350 degrees
Note: For more flavor you can add more Ranch dressing and cheddar cheese. Makes a great addition to a tailgate meal.
