1 lb. 90% lean ground Amana beef (sold in the Hy-Vee Meat Service Case)
1 Tbs. chili powder
1 tsp. cumin
1 tsp. paprika
2 cloves garlic, minced
2 cups fresh salsa
1 can black beans, drained and rinsed
1/2 cup sweet corn, fresh or frozen
6 oz. plain Greek yogurt
3 cups HM organic corn tortilla chips, lightly crushed
1/2 cup chopped scallions
1 cup chopped fresh tomato
1 cup freshly shredded cheddar cheese
Preheat oven to 350 degrees F. Cook the ground beef in a skillet over medium heat; drain fats. Add the seasoning and garlic and continue to cook, just until garlic is fragrant, 30-60 seconds. Add the salsa, black beans, corn and yogurt.
Spray a 9 x 13 pan with non-stick spray; place half of the chips across the bottom of the prepared pan, then layer with half of the beef mixture. Repeat layers, and then top with the green onions, tomato and cheese.
Bake, uncovered, in preheated oven for 30-40 minutes or until hot and bubbly throughout. Serve at once. Serves 6.
