Amber's Faux (Mock) Fried Chicken

And Amber and Alli both recommend you look for the "Smart" Chicken cuts to make this even healthier and tastier.

Ingredients

1 ½ pounds boneless, skinless chicken breasts
½ cup whole-wheat bread crumbs
½ cup Panko bread-crumbs or crushed saltine crackers
1 tsp granulated garlic
1 tsp fresh ground pepper
Dash of Kosher salt
1 tsp dried thyme
½ tsp paprika
1 cup low-fat ranch dressing

Directions

First, start by pre-heating your oven to 375 degrees. Line a baking sheet with aluminum foil and place a cooling rack over the top.

In a large reseal-able plastic bag, combine breadcrumbs and spices.

Coat the Smart chicken breasts with ranch dressing and place into the bag; toss until chicken is well coated with breadcrumb mixture. Place the coated chicken onto the prepared cooling rack.

Bake chicken in preheated oven 30-45 minutes, or until juices run clear and chicken is no longer pink, 160 degrees internal temperature.
