Baked Potato Bombs
These baked babies are the bomb, and you can lighten it up a little with a lighter sour cream, too.
Makes: 8 potato bombs
¾ cup 2% cheddar cheese
1 small to medium red pepper, diced
½ cup light sour cream
2 green onions, diced
4 baking potatoes, washed and scrubbed
Salt and pepper, to taste
3 slices turkey bacon, cooked, crumbled
1. Bake the potatoes in the oven for 1 hour (wrapped in foil.) at 400 or in the microwave for 10-12 minutes (wrapped in plastic). Cut in half. Scoop out most of the filling and save for another use, like mashed potatoes.
2. Spray the skins with cooking spray. Bake at 450 degrees for 10 minutes on each side.
3. Season the inside with salt and pepper, bacon, cheese, red pepper and onions. Broil 2-3 minutes until cheese is melted.
4. Serve with light sour cream.
