CASA Home for the Holidays: Cranberry Dijon Chicken

Four wonderful Topeka homeowners have graciously offered their homes for this year's 25th Annual CASA Homes for the Holidays tour. They've each decorated for the holidays, and shared a go-to holiday recipe with 13 News This Morning. Now we're sharing them with you! The first comes from Doug Bowen.


When we arrived to Doug's home, the smell of cranberry chicken filled the air. It was amazing! Combine that with his beautiful collection of winter homes placed above the kitchen cabinets, the stockings over the fireplace, and the nutcrackers standing guard on an alcove separating the kitchen from the living room, and his home in Millers Glenn was truly filled with the holiday spirit.


The tour raises money for CASA of Shawnee County. CASA is Court Appointed Special Advocates for children. The organization's mission is to be the voice for abused and neglected children in the court system, to make sure they don't get lost in the legal and social service system.

Saturday, November 17


Sunday, November 18


10 a.m. - 5 p.m.


$9 in advance - $10 at the door

CRANBERRY DIJON CHICKEN


1 family pack chicken cuts (can also use leg quarters or boneless, skinless chicken breasts or thighs)


1 14-oz can whole berry cranberry sauce


1 packet Lipton Vegetable soup mix


1 16-oz bottle Catalina or French salad dressing


2 Tbsp Dijon mustard


Preheat oven to 350 degrees.


Mix all ingredients except chicken in medium-large glass baking dish. Add chicken and spoon mixture over top of chicken to cover completely.


Bake uncovered 45-60 minutes, depending on choice of chicken cuts. Occasionally baste with mixture.


Chicken is done when liquid runs clear or meat flakes with twist of a fork.


Great served over mashed potatoes with side of green beans.
