Navy Bean Chocolate Chip Cookies




Ingredients

• 1 cup cooked navy beans
• 1/2 cup butter
• 1 cup white sugar
• 1 cup brown sugar
• 2 eggs
• 1 teaspoon vanilla
• 2 cups flour
• 1 teaspoon salt
• 2 cups quick oats
• 1 cup chocolate chips

Directions

1. Preheat oven to 375 F. Grease cookie sheet; set aside.

2. In food processor, purée beans until thick. Measure 1 cup puree and, in mixer, cream with butter and sugars. Stir in eggs and vanilla. Add remaining ingredients, and blend well.

3. Drop dough by tablespoonfuls onto prepared cookie sheet. Bake for about 16 minutes, or until golden brown. Cool on wire rack.
