1 ¼ cup dark brown sugar
¾ cup soy nut butter
½ cup unsalted butter
1 tablespoon vanilla bean paste
1 ½ cup all-purpose flour
¼ cup soy flour
¾ teaspoon baking soda
½ teaspoon salt
½ cup soy nuts, roasted
DirectionsIn a large bowl, combine brown sugar, soy nut butter, butter and vanilla bean paste. Beat in one egg.
In a separate bowl, whisk together flours, baking soda and salt. Slowly add this to the bowl. Spoon 1 tablespoon dough into 2 ½ -inch hear shaped cookie cutter and place on baking sheet. Place a few roasted soynuts on each cookie. Bake in 375 degree oven for 8 to 10 minutes. Place on wire rack to cool. Makes 3 dozen cookies.
