Loaded Baked Potato Soup

4 medium potatoes, scrubbed
4 slices of bacon, chopped
½ cup chopped onion
½ cup soy flour blend
1 cup low sodium chicken broth
3 cups plain soy milk
2 cups grated Cheddar cheese
½ cup soy sour cream
Salt and Pepper
Green onion slices, garnish

Place potatoes on baking sheet and bake at 350 degrees for 45 minutes or until fork tender. While potatoes are baking place bacon and ½ cup chopped onion in 4-quart stock pan and cook until bacon is?"} browned and onions are tender. Add soy flour blend; stir to blend and cook an additional 5 minutes. Add chicken broth and stir; add soy milk and continue stirring until mixture thickens. Coarsely chop potatoes and add to soup. Add cheese and soy sour cream; stir to combine and heat until cheese melts. Garnish with green onion, bacon and grated cheese. Serves 6.

Beef and Biscuit Pot Pie

¾ pound small beef cubes
¼ cup soy-flour blend
2 tablespoons vegetable oil
½ cup onions
3 cups low sodium beef stock
2 medium baking potatoes, peeled and cubed
2 cups mixed vegetables or (12 oz. bag frozen vegetables)
½ teaspoon salt
¼ teaspoon pepper

Combine beef cubes and soy-flour blend in medium bowl; toss to thoroughly coat. Heat vegetable oil in 4-quart stock pot add beef mixture cook over medium heat until beef is browned. Add ½ cup chopped onion and sauté until onions are tender. Add beef stock, potatoes, vegetables, salt and pepper. Simmer for 45 minutes or until beef and vegetables are tender.

Make Bacon and Chive Biscuits. Place hot beef mixture into greased 9-inch greased pie plate or casserole dish. Place six cut biscuits on top of beef mixture.* Bake at 400 degrees for 15 minutes until biscuits are golden brown. Serves 6.

*Remaining biscuits can be baked on baking sheet and served separately.

Bacon and Chive Biscuits

2 cups soy-flour blend
3 teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
1/3 cup shortening
½ cup chopped, cooked bacon
2 tablespoons chopped chives
¾ cup buttermilk

•Combine soy-flour blend, baking powder, baking soda and salt in medium mixing bowl. Cut in shortening until coarse crumbs. Stir in bacon and chives. Add buttermilk and stir until all ingredients are moistened to make a soft dough. Place dough on lightly floured surface and knead gently about 10 times. Roll dough to ½ - inch thick. Using a 2-inch cutter cut dough and place on ungreased baking sheet. Bake at 400 F for 12–15 minutes or until golden brown. Makes 12 biscuits.
