1 ½ cups soy flour blend
2 tablespoons sugar
2 teaspoons baking powder
¼ teaspoon salt
½ cup sautéed onion
½ cup bacon crumbles
½ cup soy margarine, melted
½ cup soy milk
2 eggs, beaten
Combine soy flour blend, sugar, baking powder and salt in mixing bowl. Add onion and bacon; stir to coat. In separate mixing bowl combine, margarine, soy milk and eggs. Add to dry ingredients; stir only until dry ingredients are mixed. Pour into greased muffin pan or liners. Bake at 400 degrees for 18 to 20 minutes until wooden pick inserted comes out clean. Makes about 12 muffins.
