As promised here is the recipe for the blueberry muffins. It belongs to Betty Crocker (we all know she's got this whole cooking thing down pat). It actually came from an old recipe book printed back in 1977! My grandma gave it to me and I just LOVE it. Believe it or not this recipe is SO easy there's no point in buying the pre-made mix. Try it and you will see.
1 egg 1/2 cup milk
1/4 cup vegetable oil 1/2 tsp. salt
1 1/2 cups flour 1 cup fresh blueberries or 3/4 cup well drained (thawed)
2 tsp. baking powder
1/2 cup sugar
Heat oven to 400 degrees. Grease bottoms of 12 medium muffin cups. Beat egg, stir in milk and oil. Mix in remaining ingredients just until flour is moistened. Batter should be lumpy. Fold blueberries into batter.
Bake 20-25 minutes or until golden brown. Immediately remove from pan.
*Hint: If you like the extra large muffins I would double this recipe.
Variation: Jelly filled muffins- Fill muffin cups only 1/2 full drop 1 tsp. jelly in center of each and add batter to fill cups 2/3 full.
