2 cups soy flour blend ¾ teaspoon baking soda ½ teaspoon salt ¾ cup margarine, softened ¾ cup sugar 2 eggs 1 teaspoon vanilla 1 cup milk chocolate toffee pieces
½ cup coarsely chopped almonds
½ cup mini semi-sweet chocolate chips
Topping:
1 cup mini semi-sweet chocolate chips
½ cup coarsely chopped almonds
¼ cup milk chocolate toffee pieces
Combine in small mixing bowl soy flour blend, baking soda and salt. In large mixing bowl cream margarine and sugar; add eggs one at a time and vanilla; mix well. Gradually stir flour mixture into creamed mixture. Stir in a cup toffee pieces, ½ cup almonds and ½ cup semi-sweet chocolate chips. Spread mixture into a greased 8x8-inch greased baking pan. Bake at 350o for 20 to 25 minutes or until wooden pick comes out clean when inserted in center. Remove pan from oven and immediately sprinkle 1 cup semi-sweet chocolate chips over baked cookie crust; wait 2 minutes and spread melted chocolate evenly. Sprinkle with ½ cup almonds and ¼ Cup toffee pieces. Cool completely. Cut into bars. Makes about 2 dozen bars.
