Recipe: Rich Chocolate Pie

Celebrating National Soyfoods Month with Charlene Patton and Rich Chocolate Pie.


1 package (12 ounces) semi-sweet chocolate chips
4 tablespoons light corn syrup
1 package (12 ounces) firm tofu
1 package (12 ounces) soft tofu
1 (6 ounce) chocolate cookie pie crust (8 or 9-inch)

Place chocolate chips in mixing bowl; heat in microwave for about 1 ½ minutes until melted; stir every 30 seconds. Stir in corn syrup. Blend tofu in a food processor or blender until smooth. Add tofu to melted chocolate mixture and blend until creamy. Pour chocolate filling into pie crust. Chill about 6 six hours or until set. Garnish with whipped cream and chocolate shavings before serving.

Yield 8 slices. Per 1 slice serving: 303 calories, 15 g fat (7 g sat fat), 8 g protein (7 g soy protein), 43 g carbohydrate, 66 mg sodium, 0 mg cholesterol, 3 g dietary fiber.
