1 can (13.8 oz.) pizza crust dough ½ pound bulk Italian sausage, crumbled and browned, drain 1 cup broccoli florets 1 cup chopped bell pepper 1 cup halved cherry tomatoes 1 cup sliced mushrooms ½ cup chopped green onion 6 eggs ½ cup soy sour cream 1 cup shredded Italian cheese 2 tablespoons grated Parmesan cheese
Preheat oven to 375°F. Unroll dough and press to fit lightly greased 15x10x1- inch baking pan. Top with cooked Italian sausage, broccoli, bell pepper, tomatoes, mushrooms and green onion. In medium mixing bowl, combine eggs and sour cream; pour mixture over dough. Top with Italian cheese. Bake 30 to 35 minutes or until eggs are set and crust is golden brown. Sprinkle with Parmesan cheese before serving. Serves 6
APPLE PANCAKES 1 cup pancake or baking mix 1 egg 1/2 cup soy milk 2/3 cup grated apple Combine pancake mix, egg and soy milk in mixing bowl; blend. Mixture will not be smooth. Ladle batter on greased hot griddle. Bake about 2 minutes until bubbles start to form then turn and bake another minute. Makes 10 to 12 3-inch pancakes. Serve with Cinnamon Apple Topping. CINNAMON APPLE TOPPING 3 cups sliced, apples 3 tablespoons margarine 3 tablespoon honey 1/2 teaspoon cinnamon Place apples, margarine, honey and cinnamon in skillet. Cook over low heat, turning occasionally until apples are glazed and tender; about 10 minutes. Serve over Apple Pancakes.
