FAVORITES – SALAD GREENS AND FRUIT (You pick - Create your own unique salad!)
6 cups greens (fresh leaf spinach and/or mixed greens 6 tablespoons chopped green onion 2 cups fresh fruit (berries, pears, kiwi, apple, grapes, pineapple) 1 can (10 ounces) mandarin oranges, drained ½ cup dried fruit (cranberries, raisins, cherries) ½ cup crumbled or grated cheese (feta, gorgonzola, Monterey Jack cheese) ½ cup glazed or toasted soynuts*
Layer greens large salad bowl or platter. Top with green onion, fresh fruit, oranges, dried fruit and cheese and soynuts. Serve with Vinaigrette. Serves 4 to 6
Favorite Vinaigrette: ½ cup vegetable oil 3 tablespoons balsamic vinegar 1 shallot, minced 1 teaspoon Dijon mustard 1/3 cup raspberry or strawberry jam Place all dressing ingredients in blender container. Whirl to thoroughly combine. Makes ¾ cup dressing. Pour over salad mixture
* Candied or glazed soynuts: combine ½ cup soynuts, 2 tablespoons sugar and 2 tablespoons water in skillet; heat over medium heat stirring as mixture caramelizes for about 5 minutes: remove from heat to cool; break cooled mixture into pieces to top salad.
