2 cup soy flour blend 1 teaspoon baking powder ½ cup margarine 2 eggs 1 tablespoon soy milk ½ cup blackberry jam
Topping: 1 cup shredded coconut 1/3 cup sugar 2 tablespoons margarine, melted
Combine in large mixing bowl soy flour blend and baking powder. Add margarine and cut in using pastry blender or fork to make a coarse mixture. In small bowl combine eggs and soy milk; whisk to blend. Add egg mixture to flour mixture; stir to combine.
Spread dough into a greased 8x8-inch greased baking dish. Spread jam evenly over dough to about ½-inch from edge of pan. Prepare topping by combing coconut, sugar and melted margarine. Spread topping mixture over jam. Bake at 350o for 25 to 30 minutes or until topping is lightly browned. Cool complete. Cut into bars. Makes about 2 dozen bars.
