RECIPE: Crunchy Peanut Butter Bars

Charlene Patton is back with a protein-packed treat. Here is the recipe she shared with us on Midday in Kansas.

 

CRUNCHY PEANUT BUTTER BARS

2 ¾ cups soy flour blend
1 cup brown sugar
½ cup margarine
½ cup shortening
½ cup peanut butter
1 egg
1 teaspoon vanilla
½ teaspoon salt

Topping:
1 ½ cups semi-sweet chocolate chips
½ cup peanut butter
1 ½ cups sweetened fiber twigs, soy protein grahams and honey puff cereal
 
Combine in large bowl, soy flour blend, brown sugar, margarine, shortening, ½ cup peanut butter, egg, vanilla and salt; mix well.  Press dough into ungreased 15x10x1-inch baking pan.  Bake at 350 degrees for 15 to 20 minutes or until set.  Remove from oven and let cool for 5 minutes. 
Topping:  While mixture is cooling; combine chocolate chips and ½ cup peanut butter in saucepan and heat stirring until smooth.  Add cereal and stir to combine.  Spread chocolate mixture on warm bars.  Let cool.  Cut into bars.  Makes 4 dozen.
