Cheesecake-Stuffed Strawberries


15 fresh, medium strawberries, washed and dried
1 8-ounce package of Hy-Vee cream cheese, softened
1/2 cup of Hy-Vee powdered sugar
1 teaspoon of Hy-Vee vanilla extract
1/2 cup of graham cracker crumbs
1 6-ounce bar of dark chocolate, finely chopped

Slice of f the stem end of each strawberry. Use a knife to scoop out a little bit of each berry to make a cavity in the center. Set your berries aside for now.

In a mixing bowl, beat together the cream cheese, powdered sugar and vanilla with an electric mixer until it's smooth. Using a pastry bag or a small spoon, fill each strawberry with the cream cheese mixture, mounding a bit on the top of the berry. Place strawberries on a baking sheet lined with waxed paper. Sprinkle your cream cheese mixture with graham cracker crumbs.

In a double boiler, melt the dark chocolate until it's smooth. Then gently dip the bottom of each strawberry in the melted chocolate. Set on waxed paper to cool; refrigerate to set the chocolate. Serve your strawberries no more than six hours after you prepare them. Enjoy!
